Ingredients

For the Biscuits:

  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ cup (1 stick) cold unsalted butter, cubed
  • ¾ cup cottage cheese
  • ⅓ cup milk or buttermilk
  • 1 large egg
  • ½ tsp garlic powder (optional)

For the Herbs:

  • 2 tbsp fresh chives, chopped
  • 1 tbsp fresh parsley, chopped
  • 1 tbsp fresh dill, chopped (or thyme for an earthy touch)

Instructions

1. Preheat & Prepare:

  • Preheat the oven to 400°F (200°C).
  • Line a baking sheet with parchment paper.

2. Mix Dry Ingredients:

  • In a large bowl, whisk together flour, baking powder, baking soda, salt, pepper, and garlic powder.

3. Cut in Butter:

  • Add cold cubed butter to the flour mixture.
  • Use a pastry cutter or fork to blend until the mixture resembles coarse crumbs.

4. Add Wet Ingredients:

  • In a separate bowl, whisk together cottage cheese, milk, and egg.
  • Pour into the flour mixture and gently stir until just combined.

5. Fold in Herbs:

  • Gently mix in chives, parsley, and dill.
  • Avoid overmixing to keep the biscuits light and tender.

6. Shape the Biscuits:

  • Drop spoonfuls of dough onto the prepared baking sheet OR roll out and cut into circles.

7. Bake & Enjoy:

  • Bake for 12-15 minutes or until golden brown.
  • Brush with melted butter for extra flavor!
