Ingredients

(Makes 4 sandwiches)

For the Chicken:

  • 1 lb boneless, skinless chicken breasts, thinly sliced or chopped
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp crushed red pepper flakes (optional, for heat)

For the Sandwiches:

  • 1 tbsp butter
  • 1 small onion, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 4 slices provolone cheese (or cheese of choice)
  • 4 hoagie rolls, sliced open
  • Mayonnaise or garlic aioli (optional)

Instructions

1. Prep the Chicken:

  • Slice or chop the chicken into thin strips.
  • Toss with garlic powder, onion powder, paprika, salt, pepper, and red pepper flakes.

2. Cook the Peppers & Onions:

  • Heat butter in a skillet over medium heat.
  • Add onions and bell peppers and sauté for 4-5 minutes, until soft and slightly caramelized.
  • Transfer to a plate and set aside.

3. Cook the Chicken:

  • In the same skillet, add olive oil and seasoned chicken.
  • Cook over medium-high heat for 5-7 minutes, stirring occasionally, until fully cooked.

4. Assemble the Sandwiches:

  • Add the cooked chicken, peppers, and onions back into the skillet.
  • Place cheese slices on top and cover with a lid for 1-2 minutes until melted.

5. Toast & Serve:

  • Lightly toast the hoagie rolls in a dry pan or oven.
  • Spread with mayo or garlic aioli, if using.
  • Fill with the cheesy chicken mixture and serve hot!
