Smashed Potatoes with Garlic and Herbs

Crispy on the outside, fluffy on the inside—these smashed potatoes are loaded with garlic, butter, and fresh herbs for the ultimate side dish!

Ingredients

  • 1 ½ lbs baby potatoes (Yukon gold or red potatoes work best)
  • 3 tbsp olive oil
  • 2 tbsp unsalted butter, melted
  • 3 cloves garlic, minced
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp fresh thyme (or ½ tsp dried)
  • 1 tsp fresh rosemary, chopped (or ½ tsp dried)
  • ¼ cup grated Parmesan cheese (optional)
  • Fresh parsley for garnish

Instructions

Step 1: Boil the Potatoes

  1. Place potatoes in a large pot and cover with salted water.
  2. Bring to a boil and cook for 15-20 minutes until fork-tender.
  3. Drain and let them cool slightly.

Step 2: Smash the Potatoes

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Place potatoes on the baking sheet and gently smash each one with the back of a fork or a potato masher.

Step 3: Add Seasonings

  1. In a small bowl, mix olive oil, melted butter, garlic, salt, pepper, thyme, and rosemary.
  2. Brush the mixture generously over each smashed potato.

Step 4: Bake Until Crispy

  1. Bake for 20-25 minutes until golden brown and crispy.
  2. If using Parmesan cheese, sprinkle it on top during the last 5 minutes of baking.

Step 5: Garnish & Serve

  1. Sprinkle with fresh parsley and serve hot!

Tips for Perfect Smashed Potatoes

Use Small Potatoes: They crisp up better and are easier to smash.
Boil Until Just Tender: Overcooking makes them too mushy.
Smash Gently: Press just enough to flatten but keep them intact.
Get Extra Crispy: Bake longer or broil for 2-3 minutes at the end.
