  • 6 bell peppers
  • 1 cup long grain white rice (uncooked)
  • 1 diced onion
  • 1 cup shredded cheddar cheese
  • 1 can Rotel (10 oz)
  • 1 can tomato sauce (8 oz)
  • salt

  • cayenne
  • chili powder
  • cumin

Instructions

  1. In a skillet over medium-high heat, brown the ground beef with diced onion and seasonings until fully cooked.
  2. Stir in the Rotel, tomato sauce, and uncooked rice. Cover and simmer for about 15-20 minutes until the rice is tender.
  3. Mix in shredded cheddar cheese until melted.
  4. Prepare bell peppers by cutting off tops and removing seeds. Fill each pepper with the cheesy mixture.
  5. Air fry at 400°F (200°C) for about 10 minutes until peppers are tender.
  6. Add extra cheese on top and return to air fryer for another minute until melted.
