Ingredients

  • 2 cups cold mashed potatoes (leftover or freshly made)
  • ½ cup shredded cheddar cheese (or mozzarella)
  • ¼ cup cooked turkey bacon, crumbled (optional)
  • 2 green onions, finely chopped
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup all-purpose flour
  • 2 eggs, beaten
  • 1 cup panko breadcrumbs (for extra crispiness)
  • ½ teaspoon paprika (optional, for added flavor)
  • Cooking spray or olive oil

For Dipping (Optional):

  • Sour cream
  • Ranch dressing
  • Spicy mayo
  • Marinara sauce

Instructions

Step 1: Prepare the Mashed Potato Mixture

  1. In a bowl, mix mashed potatoes, cheese, bacon, green onions, garlic powder, salt, and black pepper until well combined.
  2. Scoop out 1 ½-inch portions and roll into balls.

Step 2: Set Up the Breading Station

  1. Place flour in one bowl.
  2. Beat eggs in a second bowl.
  3. Mix panko breadcrumbs and paprika in a third bowl.

Step 3: Coat the Potato Balls

  1. Roll each mashed potato ball in flour, then dip into egg, and coat with panko breadcrumbs.
  2. Repeat until all balls are coated.

Step 4: Air Fry the Potato Balls

  1. Preheat air fryer to 375°F (190°C).
  2. Lightly spray the air fryer basket with cooking spray.
  3. Arrange potato balls in a single layer, leaving space between them.
  4. Spray the tops with cooking spray for extra crispiness.
  5. Air fry for 10-12 minutes, shaking halfway through, until golden brown and crispy.

Step 5: Serve & Enjoy!

  1. Serve hot with your favorite dipping sauce and enjoy!

Notes

  • Use Cold Mashed Potatoes – They hold their shape better.
  • Double-Coat for Extra Crunch – Dip twice in egg and breadcrumbs for an ultra-crispy crust.
