Ingredients
- 3 cups leftover mashed potatoes
- 3 slices crumbled turkey turkey bacon
- Cubes of cheddar cheese
- 1 ½ cups breadcrumbs
- 2 tablespoons grated Parmesan
- 2 large eggs
- 1–2 tablespoons milk
- Salt and black pepper to taste
- Cooking oil spray
Instructions
- In a bowl, mix leftover mashed potatoes, crumbled turkey turkey bacon, chives, salt, and pepper. Optional: Add garlic powder.
- Scoop some mixture into your hand, flatten it, place a cheese cube in the center, and mold it into a ball.
- Set up three shallow dishes: one with flour, one with beaten eggs mixed with milk, and one with breadcrumbs combined with Parmesan.
- Coat each ball first in flour, then egg mixture, and finally breadcrumbs. For extra crunchiness, double dip in egg and breadcrumbs.
- Place the balls in the air fryer basket in a single layer. Lightly spray them with cooking oil.
- Cook at 370°F for about 4 minutes; shake the basket halfway through. If necessary, cook for an additional 2-3 minutes until golden brown.
