Ingredients
For the Chicken & Sauce:
4 boneless, skinless chicken breasts (or thighs)
2 tbsp olive oil or butter
1 can (10.5 oz) cream of chicken soup
½ cup low-sodium chicken broth
4 oz cream cheese, softened
½ cup sour cream or plain Greek yogurt
½ tsp garlic powder
½ tsp onion powder
½ tsp dried Italian herbs
¼ tsp black pepper
¼ tsp salt (adjust to taste)
For the Rice:
2 cups cooked white or brown rice
Optional: chopped parsley or green onions for garnish
Instructions
Step 1: Prepare the Sauce
In a bowl, whisk together the cream of chicken soup, cream cheese, sour cream, chicken broth, garlic powder, onion powder, herbs, salt, and pepper until smooth.
Step 2: Sear the Chicken (Optional for Extra Flavor)
In a skillet, heat olive oil or butter over medium heat.
Sear the chicken breasts for 2–3 minutes per side until lightly golden (they don’t need to be fully cooked).
Transfer to a greased 9×13-inch baking dish.
Step 3: Assemble the Casserole
Pour the cream sauce evenly over the chicken in the baking dish.
Cover with foil.
