  • 1 1/2 lbs stew beef (trimmed & cubed)
  • 1 cup thinly sliced carrots
  • 1 cup frozen green peas
  • 1 1/2 cups russet potatoes (roughly chopped)
  • 1 packet onion soup seasoning mix
  • 1 packet brown gravy mix
  • 1 can tomato sauce (8 oz)
  • 2 cups beef broth
  • 1 1/2 cups apple cider
  • 3 tbsp cornstarch
  • 1/3 cup cold water

Instructions

  1. Prepare all ingredients and place them into the slow cooker, except for cornstarch and water. Stir to combine.
  2. Cover and cook on low for 7-8 hours or high for about 4 hours until the beef is tender.
  3. In a small bowl, mix cornstarch with cold water until smooth. Add to the stew and stir well.
  4. Cook for an additional 15 minutes covered until thickened.
  5. Season with salt and pepper to taste before serving warm with crusty bread.
