  • 3 Gala apples, peeled and diced
  • 1/4 cup packed light brown sugar
  • 1/2 teaspoon cinnamon
  • 1/2 cup all-purpose flour
  • 1/2 cup quick oats
  • 1/2 cup packed light brown sugar
  • 2 teaspoons cinnamon
  • 4 tablespoons unsalted butter, melted

Instructions

  1. Preheat your oven to 350°F and prepare your springform pan.
  2. Mix graham cracker crumbs, granulated sugar, and melted butter for the crust, then press into the bottom of the pan.
  3. Beat together cream cheese and light brown sugar until smooth; add vanilla, cinnamon, flour, and eggs one at a time.
  4. Pour cheesecake filling over the crust.
  5. Combine diced apples with brown sugar and cinnamon; layer them on top of the filling.
  6. For the crumble topping, mix flour, oats, brown sugar, and cinnamon; stir in melted butter and sprinkle over apples.
  7. Bake for 50–55 minutes until set, then cool before chilling in the refrigerator for at least six hours or overnight.
