  • 200 g digestive or graham crackers
  • 150 g apples (diced)
  • 600 g cream cheese (room temperature)
  • 200 g granulated sugar
  • 80 g dark brown sugar
  • 150 g sour cream (room temperature)
  • 3 large eggs (room temperature)
  • Ground cinnamon and nutmeg
  • Butter (melted)

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. In a bowl, mix crushed crackers with ground spices, dark brown sugar, and melted butter until combined. Press into a springform pan and bake for 10 minutes; let cool.
  3. Mix diced apples with granulated sugar and ground cinnamon; set aside.
  4. Beat cream cheese and granulated sugar until smooth, then add sour cream, cornstarch, vanilla extract, and eggs one by one until fully incorporated.
  5. Layer half the cheesecake filling over the crust, followed by half the apple mixture. Repeat with remaining layers.
  6. Bake for 60-70 minutes until set but slightly jiggly in the center. Cool gradually in the oven before chilling in the refrigerator for at least four hours or overnight.
