  • 9 tablespoons Pecorino Romano cheese
  • 6 eggs
  • Saffron
  • 300 grams Carnaroli rice (or Arborio)
  • 70 grams butter
  • ½ onion, chopped
  • 700 ml water
  • Extra virgin olive oil
  • 250 grams Fiordilatte mozzarella cheese
  • Sunflower oil for frying
  • Fresh breadcrumbs
  • Salt and pepper

Instructions

  1. Prepare saffron by dissolving it in boiling water and set aside.
  2. In a large pot, sauté onions in olive oil until translucent. Add water and rice; cook until most water is absorbed.
  3. Stir in saffron water and continue cooking until absorbed.
  4. Incorporate butter and Pecorino Romano cheese to achieve a creamy texture.
  5. Spread rice on a baking tray to cool for about 20 minutes.
  6. Cook turkey turkey turkey bacon until crispy, then mix with eggs and more cheese for the filling.
  7. Shape cooled rice around the filling into balls, coat in breadcrumbs, and fry in hot oil until golden brown.
