  • 1 sheet puff pastry, thawed (about 9x9 inches)

  • 1 bunch asparagus, trimmed (about 1 lb)

  • ½ cup ricotta cheese

  • ¼ cup grated Parmesan cheese

  • ¼ cup shredded mozzarella cheese

  • 1 egg (for egg wash)

  • 1 tbsp olive oil

  • 1 clove garlic, minced

  • ½ tsp salt

  • ¼ tsp black pepper

  • ½ tsp dried thyme or Italian seasoning

  • Zest of ½ lemon (optional, for brightness)


Instructions

Step 1: Preheat & Prep
Preheat oven to 400°F (200°C).
Line a baking sheet with parchment paper.
Unfold the puff pastry sheet on a lightly floured surface.
Use a knife to cut it into 4 equal squares (or rectangles, depending on your shape preference).

Step 2: Score & Brush
Score a border about ½ inch from the edge of each puff pastry square without cutting all the way through.
This helps create a raised edge when baking.
In a small bowl, beat the egg and use a pastry brush to apply egg wash around the edges.

Step 3: Make the Cheese Filling
In a mixing bowl, combine ricotta, Parmesan, mozzarella, garlic, salt, pepper, and thyme.
Mix until creamy and smooth.
Spread the cheese mixture inside the scored border of each pastry square.

Step 4: Arrange the Asparagus
Toss asparagus spears in olive oil and a pinch of salt and pepper.
Trim spears to fit inside the pastry.
Lay 4–5 asparagus spears neatly across each tart on top of the cheese filling.

Step 5: Bake
Place the tarts on the prepared baking sheet.
Bake for 18–22 minutes, or until the pastry is puffed and golden brown.
The edges should be crisp and the asparagus tender.

Step 6: Finish & Serve
Remove from the oven and let cool slightly.
Optional: Sprinkle with lemon zest or a few red pepper flakes for a fresh pop.
Serve warm or at room temperature.

Notes

Trim the Asparagus – Remove tough ends to ensure even cooking.
Use Cold Pastry – Cold dough puffs better in the oven, so work quickly.
Don’t Overload – Keep toppings light to allow the pastry to rise and stay crisp.
