Ingredients
- 2 tbsp butter
- 1 small yellow onion (peeled & diced)
- 1 small jalapeno (seeded & minced)
- 3 cans (15 oz each) pinto beans (drained & rinsed)
- 2 cups smoked beef brisket (finely chopped)
- 1 cup barbecue sauce
- 1/2 cup light brown sugar (packed)
- 2 tbsp ketchup
- 1 tbsp mustard
- 1 tbsp Worcestershire sauce
Instructions
- In a large skillet over medium-high heat, melt the butter. Add the diced onion and minced jalapeno; sauté until softened.
- In a mixing bowl, combine the sautéed vegetables with the drained pinto beans, chopped brisket, barbecue sauce, brown sugar, ketchup, mustard, and Worcestershire sauce. Mix well.
- Preheat your oven to 350°F. Spray a 9×13 inch baking dish with non-stick cooking spray and pour in the bean mixture, spreading it evenly.
