6 large eggs
1 cup cottage cheese (full-fat or low-fat)
½ tsp salt
¼ tsp black pepper
¼ tsp garlic powder (optional)
¼ tsp smoked paprika or chili flakes (optional)
¼ cup chopped green onions or chives (optional)
½ cup chopped veggies (spinach, bell pepper, or mushrooms – optional)
¼ cup shredded cheddar or mozzarella (optional)


Instructions

Step 1: Preheat the Oven
Preheat oven to 375°F (190°C).
Grease your baking dish, ramekins, or muffin tin with nonstick spray or butter.

Step 2: Whisk the Eggs
In a mixing bowl, whisk the eggs with salt, pepper, and your choice of spices.

Step 3: Add the Cottage Cheese
Stir in the cottage cheese until evenly distributed.

Step 4: Add Mix-Ins (Optional)
Fold in green onions, chopped veggies, or shredded cheese if using.
You can also divide the mix-ins between individual ramekins for variety.

Step 5: Pour and Bake
Pour the egg mixture into the prepared dish or divide evenly between muffin cups or ramekins.
Bake for 20–25 minutes (for muffin cups) or 30–35 minutes (for larger dish) until the eggs are puffed and set in the center.

Step 6: Cool and Serve
Let cool for 5 minutes. Serve warm, or cool completely and refrigerate for later.

Notes

Use Full-Fat Cottage Cheese – Adds creaminess and better texture
Chop Veggies Small – Ensures they cook evenly
Don’t Overbake – Eggs should be just set for a tender result
