Ingredients
- 1 pound stewing beef
- 1 teaspoon salt
- 1 teaspoon pepper
- ½ cup all-purpose flour
- 2 tablespoons olive oil
- 1 large onion (chopped)
- 1 large carrot (peeled and chopped)
- 2 stalks celery (cleaned and chopped)
- 3 cloves garlic (minced)
- 1 tablespoon oregano (fresh, chopped or 1 tsp dried oregano)
- 3 tablespoons tomato paste
- 4 cups beef broth (low sodium)
- 3 cups water
- ¾ cup barley
- 1 tablespoon parsley (fresh, chopped)
Instructions
- Season the stewing beef with salt and pepper. Coat with flour in a Ziploc bag or mixing bowl.
- In a Dutch oven, heat olive oil over medium-high heat and brown the beef on all sides. Remove and set aside.
- In the same pot, sauté chopped onion, carrot, and celery until softened.
- Add minced garlic, oregano, and tomato paste; cook until fragrant. Deglaze with some beef broth.
- Return browned beef to the pot along with remaining broth and water; season as needed.
- Bring to a boil, then reduce heat and simmer for 30-45 minutes.
- Stir in barley; cover and cook for an additional 30 minutes or until tender.
