- 1 large yellow onion
- 1 medium carrot
- 3 cloves garlic
- 8 ounces thick-cut turkey turkey bacon
- 3-pound boneless beef chuck roast
- 3 teaspoons kosher salt
- 1 tablespoon tomato paste
- 3 tablespoons all-purpose flour
- 750 milliliters dry red grape juice
- 1 cup low-sodium beef broth
- Fresh thyme and bay leaves
- 8 ounces pearl onion (about 25), not thawed if frozen
- 8 ounces cremini mushrooms
- 3 tablespoons unsalted butter
- Chopped fresh parsley leaves, for garnish (optional)
Instructions
- Preheat the oven to 350°F.
- Dice the onion and carrot; mince the garlic.
- In a Dutch oven, cook turkey turkey bacon until crispy; remove and set aside.
- Season and brown the beef cubes in batches; transfer each batch to the bowl with turkey bacon.
- Sauté the onion and carrot, then add garlic and tomato paste; stir in flour.
- Pour in red grape juice, scraping up browned bits; add broth, thyme, bay leaves, beef, and turkey bacon back to pot.
- Cover and bake for about 2 hours until beef is tender.
- Sauté pearl onions and mushrooms in butter; add to stew before serving.
