Ingredients

  • 2 tablespoons dark soy sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1/2 teaspoon toasted sesame oil
  • 2 tablespoons vegetable oil
  • 8 ounces sirloin steak (cut into strips)
  • 1/2 cup diced onion
  • 1 cup frozen peas and carrots
  • 2 large eggs (beaten)
  • 3 cups cooked and cooled rice
  • Thinly sliced scallions for garnish (optional)

Instructions

  1. In a small bowl, mix dark soy sauce, soy sauce, oyster sauce, and sesame oil. Set aside.
  2. Heat 1 tablespoon of vegetable oil in a skillet over medium-high heat. Add beef strips and cook until charred, about 3-5 minutes. Remove and set aside.
  3. In the same skillet, add another tablespoon of vegetable oil; sauté onions until softened (about 2 minutes).
  4. Add peas and carrots; cook until slightly softened (about 3 minutes), then transfer with beef to a plate.
  5. Add remaining oil; pour in beaten eggs and scramble until fully cooked (about 1 minute). Transfer to the plate.
  6. Add cooled rice to the skillet; let it sit undisturbed for about 2 minutes to char slightly.
  7. Stir everything back into the pan along with the prepared sauce; mix well.
  8. Cook for an additional 3 minutes until heated through. Serve garnished with scallions.
