- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1/2 teaspoon toasted sesame oil
- 2 tablespoons vegetable oil
- 8 ounces sirloin steak (cut into strips)
- 1/2 cup diced onion
- 1 cup frozen peas and carrots
- 2 large eggs (beaten)
- 3 cups cooked and cooled rice
- Thinly sliced scallions for garnish (optional)
Instructions
- In a small bowl, mix dark soy sauce, soy sauce, oyster sauce, and sesame oil. Set aside.
- Heat 1 tablespoon of vegetable oil in a skillet over medium-high heat. Add beef strips and cook until charred, about 3-5 minutes. Remove and set aside.
- In the same skillet, add another tablespoon of vegetable oil; sauté onions until softened (about 2 minutes).
- Add peas and carrots; cook until slightly softened (about 3 minutes), then transfer with beef to a plate.
- Add remaining oil; pour in beaten eggs and scramble until fully cooked (about 1 minute). Transfer to the plate.
- Add cooled rice to the skillet; let it sit undisturbed for about 2 minutes to char slightly.
- Stir everything back into the pan along with the prepared sauce; mix well.
- Cook for an additional 3 minutes until heated through. Serve garnished with scallions.
