  • 500 grams Organic grass-fed veal mince
  • 500 grams Organic grass-fed chicken mince
  • 1 Carrot (diced)
  • 1 Celery stick (diced)
  • ½ Brown onion (diced)
  • 2 Bottles Italian passata
  • 1 glass red grape juice
  • Provolone cheese
  • Buffalo Mozzarella
  • Grated pecorino cheese
  • Fresh egg lasagna pasta sheets
  • 25 grams Butter
  • 25 grams plain flour
  • 250 ml Milk
  • Sprinkle of salt
  • Sprinkle of nutmeg
  • Extra virgin olive oil

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. In a saucepan with olive oil, sauté onions until translucent. Add diced carrot and celery; cook until softened.
  3. Stir in both types of minced meat and brown thoroughly. Mix in Italian passata and grape juice; season with salt and pepper. Simmer for 30 minutes.
  4. For the béchamel sauce, melt butter in another saucepan, whisk in flour for 2 minutes. Gradually add milk while whisking until thickened; season with salt and nutmeg.
  5. Layer meat sauce in a baking dish, followed by lasagna sheets and béchamel sauce. Repeat layers and finish with béchamel on top, garnished with mozzarella and grated pecorino.
  6. Bake for about 180 minutes until golden brown.
