  • 2 pounds beef tenderloin (center cut)
  • 6 slices turkey turkey prosciutto
  • pounds mushrooms
  • 2 tablespoons Dijon mustard
  • 2 sheets puff pastry
  • 2 large eggs (beaten)
  • Olive oil
  • Salt
  • Pepper

Instructions

  1. Season beef tenderloin with salt and pepper. Sear in olive oil over high heat until browned on all sides. Allow cooling slightly before brushing with Dijon mustard.
  2. In the same skillet, sauté shallots in butter until translucent. Add garlic and chopped mushrooms along with thyme, cooking until moisture evaporates. Cool completely.
  3. Lay out crepes and layer turkey turkey prosciutto on top. Spread mushroom duxelles over it and place the seared beef on top. Roll tightly using crepes as a guide.
  4. Roll out puff pastry, wrap the beef roll securely, sealing edges with beaten egg wash.
  5. Preheat oven to 400°F (200°C) and bake seam-side down for 25-30 minutes until golden brown.
