Ingredients

Scale
  • ½ cup salted butter (softened)
  • 2 ounces cream cheese (softened)
  • 1½ cups sugar
  • 2 large eggs
  • 1½ teaspoons vanilla extract
  • ¼ teaspoon almond extract
  • 2½ cups all-purpose flour
  • 1 tablespoon cornstarch
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • Red and green sanding sugars

Instructions

  1. In a large mixing bowl, combine softened butter, cream cheese, sugar, eggs, vanilla extract, and almond extract. Use a hand mixer to beat until light and fluffy (about 4-5 minutes).
  2. Scrape down the sides of the bowl with a rubber spatula. Add flour, cornstarch, baking soda, and salt. Mix on low speed until a soft dough forms.
  3. Cover the bowl with plastic wrap and refrigerate for at least 2 hours.
  4. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  5. Use a cookie scoop to portion out the dough into balls and place them on the baking sheet at least 1 inch apart.
  6. Press each dough ball lightly with a fork to create a criss-cross pattern.
  7. Sprinkle sanding sugars over each cookie before baking.
  8. Bake for 9 to 11 minutes until slightly undercooked but not browned.
  9. Let cool on the baking sheet for about 5 minutes before transferring to a wire rack.
