Ingredients

For the Filling:
2 cups cooked chicken, shredded or cubed
1 ½ cups frozen mixed vegetables (peas, carrots, corn, green beans)
1 can (10.5 oz) cream of chicken soup
½ cup milk
½ tsp garlic powder
½ tsp onion powder
Salt and black pepper to taste

For the Bisquick Crust:
1 cup Bisquick baking mix
½ cup milk
1 egg

Instructions

Step 1: Preheat the Oven
Preheat your oven to 400°F (200°C).
Lightly grease a 9-inch pie plate or 8×8-inch baking dish.

Step 2: Make the Filling
In a large bowl, combine the cooked chicken, frozen vegetables, cream of chicken soup, milk, garlic powder, onion powder, salt, and pepper.
Stir until well mixed and creamy.

Step 3: Transfer to Baking Dish
Pour the filling mixture into the prepared pie dish.
Spread it evenly with a spatula to ensure every bite has a bit of everything.

Step 4: Mix the Bisquick Topping
In a separate bowl, whisk together Bisquick, milk, and the egg until smooth.
The batter will be pourable, like pancake batter.

Step 5: Add the Topping
Pour the Bisquick mixture evenly over the top of the filling.
No need to spread—just tilt the dish gently to let the topping settle.

Step 6: Bake to Golden Perfection
Place the dish in the preheated oven and bake for 30–35 minutes, or until the top is golden brown and the filling is bubbly.
Let it cool for 5–10 minutes before serving to help it set.

Step 7: Serve & Enjoy
Scoop into bowls or serve sliced like pie.
Optional: Sprinkle fresh chopped parsley on top for a pop of color and freshness.

Notes

Use Leftover Chicken – Rotisserie chicken or meal-prep chicken makes this dish super quick.
Don’t Thaw the Veggies – Frozen mixed veggies go straight into the filling for convenience.
Adjust the Seasoning – Taste the filling before baking and tweak to your liking.
Add Cheese – Mix in ½ cup shredded cheddar for a cheesy twist.
Make It Heartier – Add diced cooked potatoes or mushrooms for extra substance
