Ingredients
For the Filling:
4 cups fresh or frozen blackberries (if frozen, thaw and drain slightly)
½ cup granulated sugar
1 tbsp lemon juice
1 tbsp cornstarch (for thickening)
For the Cobbler Topping:
1 cup all-purpose flour
1 cup granulated sugar
1 tsp baking powder
¼ tsp salt
1 cup milk
½ cup unsalted butter (1 stick), melted
½ tsp vanilla extract (optional)
Optional Toppings:
Vanilla ice cream
Whipped cream
Powdered sugar for dusting
Lemon zest for a fresh twist
Instructions
Step 1: Preheat Oven & Prep Pan
Preheat your oven to 350°F (175°C). Lightly grease a 9×9-inch baking dish with butter or spray.
Step 2: Mix the Berries
In a bowl, toss blackberries with sugar, lemon juice, and cornstarch. Set aside to allow juices to release.
Step 3: Make the Batter
In a separate bowl, whisk together flour, sugar, baking powder, and salt.
Stir in milk, melted butter, and vanilla (if using) until smooth.
Step 4: Assemble the Cobbler
Pour the batter evenly into the baking dish. Do not stir it.
Spoon the berry mixture evenly over the batter—again, don’t stir. The batter will rise up around the fruit as it bakes.
Step 5: Bake
Bake for 45–50 minutes, or until the top is golden brown and the berry filling is bubbling at the edges.
Step 6: Cool & Serve
Let cool for at least 10 minutes before serving. Serve warm with a scoop of vanilla ice cream or your favorite topping.
Notes
Don’t Stir the Layers – Pour batter first, then spoon berries on top
Use Fresh or Frozen Berries – Just drain frozen ones slightly to avoid excess liquid
Add a Crunch – Sprinkle coarse sugar on top before baking
For Extra Flavor – Add cinnamon or nutmeg to the batter
