  • 1 lb Mafaldine noodles (or fettuccini/linguini)
  • 3 chicken breasts
  • 4 tablespoons olive oil
  • 4 tablespoons blackened seasoning
  • 6 tablespoons butter
  • 68 cloves garlic, minced
  • 2 cups heavy whipping cream
  • 1.5 cups shredded parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Pound chicken to an even thickness of 1/4 inch. Rub with olive oil and season both sides with blackened seasoning.
  2. Heat a skillet over medium-high heat, add olive oil, and cook chicken for 3–4 minutes until dark amber on one side; flip once.
  3. Lower heat, add butter and minced garlic, cooking for another 5–6 minutes until chicken reaches an internal temperature of 165°F.
  4. Remove chicken and let it rest before slicing.
  5. In the same skillet, melt remaining butter, sauté garlic for 1–2 minutes, then stir in heavy cream and additional blackened seasoning; simmer until thickened (about 5 minutes).
  6. Cook noodles according to package instructions; reserve some pasta water before draining.
  7. Stir in parmesan cheese into the sauce until melted; adjust seasonings.
  8. Combine cooked noodles with the sauce, adding reserved pasta water as needed, then top with sliced chicken.
