Ingredients

Scale

For the Puff Pastry Twirls:

  • 1 sheet frozen puff pastry (thawed)

  • ⅓ cup blue cheese, crumbled

  • ⅓ cup chopped walnuts (lightly toasted)

  • 1 tsp fresh thyme leaves (or ½ tsp dried thyme)

  • 1 tbsp honey (optional for a touch of sweetness)

  • 1 egg, beaten (for egg wash)

  • All-purpose flour (for dusting surface)

For Garnish & Serving:

  • Extra thyme leaves

  • Cracked black pepper

  • A drizzle of honey or balsamic glaze (optional)

Instructions

Step 1: Prep the Puff Pastry
Lightly flour your work surface and unfold the thawed puff pastry sheet.
Using a rolling pin, gently roll it out to smooth the folds and create a rectangle about 10×12 inches.

Step 2: Add the Filling
Sprinkle crumbled blue cheese evenly across the puff pastry, leaving a ½-inch border on all sides.
Top with chopped toasted walnuts and thyme leaves.
Drizzle with honey if using—it adds a lovely contrast to the tangy cheese.
Press gently to help the toppings stick to the pastry.

Step 3: Fold and Slice
Fold the pastry in half lengthwise, pressing gently to seal.
Use a sharp knife or pizza cutter to slice the folded pastry into ½-inch strips.
You should end up with about 12 strips.

Step 4: Twist into Spirals
Take each strip and gently twist it into a spiral shape.
Lay them onto a parchment-lined baking sheet, spacing them slightly apart.
Brush each twist with beaten egg for a shiny, golden finish.
Sprinkle a little extra thyme and cracked black pepper over the top.

Step 5: Bake Until Golden
Preheat your oven to 400°F (200°C).
Bake the twists for 15–18 minutes, or until golden brown and puffed.
Rotate the baking sheet halfway through for even browning.

Step 6: Cool & Serve
Remove from the oven and let the twists cool on a wire rack for 5 minutes.
Serve warm or at room temperature.
Optional: Drizzle with more honey or balsamic glaze for extra flavor.

Notes

Thaw Puff Pastry Properly – Let it thaw in the fridge overnight or for about 40 minutes on the counter.
Toast the Walnuts – Light toasting enhances their nutty flavor and crunch.
Use Quality Blue Cheese – Choose a creamy, flavorful variety like Gorgonzola or Roquefort.
Seal the Twists – Press lightly to ensure the cheese and nuts stick as you twist.
Bake Right Away – Don’t let the filled pastry sit too long or it may get soggy.
