  • ½ cup plain Greek yogurt

  • 3 large eggs

  • 2 tbsp maple syrup or honey

  • 1 tsp vanilla extract

  • ½ tsp cinnamon

  • ¼ tsp salt

  • 2 tbsp almond flour or oat flour (optional, for slight thickness)

  • 1 cup fresh or frozen blueberries (if frozen, do not thaw)

  • 1 tbsp lemon zest (optional, for brightness)

  • Olive oil or non-stick spray (for greasing)

Topping (Optional):

  • 1 tbsp turbinado sugar (for crunch)

  • 2 tbsp sliced almonds or chopped walnuts

  • Extra blueberries for garnish


Instructions

Step 1: Preheat and Prep

  1. Preheat oven to 350°F (175°C).

  2. Lightly grease an 8×8-inch baking dish with olive oil or non-stick spray.

Step 2: Make the Batter

  1. In a medium mixing bowl, whisk together cottage cheese, Greek yogurt, eggs, maple syrup, vanilla extract, cinnamon, and salt until smooth.

  2. Stir in almond flour or oat flour if using—it helps give the bake a firmer texture.

  3. Gently fold in the blueberries and lemon zest.

Step 3: Assemble the Bake

  1. Pour the mixture into the prepared baking dish and spread evenly.

  2. Sprinkle the top with turbinado sugar, sliced almonds, and extra blueberries if desired.

Step 4: Bake

  1. Bake for 35–40 minutes, or until the center is set and the top is lightly golden.

  2. A toothpick inserted into the center should come out mostly clean with a few moist crumbs.

  3. Let cool for 10 minutes before slicing.

Step 5: Serve

  1. Serve warm or at room temperature.
