For the Blueberry Bread:

  • 1 ¾ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup unsalted butter, softened
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup sour cream (or Greek yogurt)
  • ¼ cup milk
  • 1 ¼ cups fresh or frozen blueberries (tossed in 1 tablespoon flour)

For the Cream Cheese Swirl:

  • 8 oz cream cheese, softened
  • ¼ cup granulated sugar
  • 1 large egg
  • ½ teaspoon vanilla extract

Instructions

Step 1: Preheat & Prepare the Pan

  1. Preheat oven to 350°F (175°C).
  2. Grease and line a 9×5-inch loaf pan with parchment paper.

Step 2: Make the Blueberry Bread Batter

  1. In a bowl, whisk together flour, baking powder, baking soda, and salt.
  2. In another bowl, beat butter and sugar until light and fluffy.
  3. Mix in eggs, vanilla extract, sour cream, and milk until smooth.
  4. Gradually add the dry ingredients, mixing until just combined.
  5. Fold in blueberries, coating them in flour to prevent sinking.

Step 3: Make the Cream Cheese Filling

  1. In a separate bowl, beat cream cheese, sugar, egg, and vanilla extract until smooth.

Step 4: Assemble the Bread

  1. Pour half of the bread batter into the loaf pan.
  2. Spread the cream cheese mixture evenly over the batter.
  3. Top with the remaining bread batter, spreading gently to cover.

Step 5: Bake & Cool

  1. Bake for 55-65 minutes, or until a toothpick inserted in the center comes out clean.
  2. Let cool in the pan for 10 minutes, then transfer to a wire rack.

Step 6: Serve & Enjoy!

  1. Slice and serve warm or at room temperature.

Notes

  • Use Fresh or Frozen Blueberries – If using frozen, don’t thaw before baking.
  • Don’t Overmix the Batter – This keeps the bread soft and fluffy.
  • Bake Until Fully Set – The cream cheese layer should be firm when done.
  • For Extra Crunch – Add a crumble topping with butter, flour, and sugar.
