For the Blueberry Bread:
- 1 ¾ cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ½ cup unsalted butter, softened
- ¾ cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- ½ cup sour cream (or Greek yogurt)
- ¼ cup milk
- 1 ¼ cups fresh or frozen blueberries (tossed in 1 tablespoon flour)
For the Cream Cheese Swirl:
- 8 oz cream cheese, softened
- ¼ cup granulated sugar
- 1 large egg
- ½ teaspoon vanilla extract
Instructions
Step 1: Preheat & Prepare the Pan
- Preheat oven to 350°F (175°C).
- Grease and line a 9×5-inch loaf pan with parchment paper.
Step 2: Make the Blueberry Bread Batter
- In a bowl, whisk together flour, baking powder, baking soda, and salt.
- In another bowl, beat butter and sugar until light and fluffy.
- Mix in eggs, vanilla extract, sour cream, and milk until smooth.
- Gradually add the dry ingredients, mixing until just combined.
- Fold in blueberries, coating them in flour to prevent sinking.
Step 3: Make the Cream Cheese Filling
- In a separate bowl, beat cream cheese, sugar, egg, and vanilla extract until smooth.
Step 4: Assemble the Bread
- Pour half of the bread batter into the loaf pan.
- Spread the cream cheese mixture evenly over the batter.
- Top with the remaining bread batter, spreading gently to cover.
Step 5: Bake & Cool
- Bake for 55-65 minutes, or until a toothpick inserted in the center comes out clean.
- Let cool in the pan for 10 minutes, then transfer to a wire rack.
Step 6: Serve & Enjoy!
- Slice and serve warm or at room temperature.
Notes
- Use Fresh or Frozen Blueberries – If using frozen, don’t thaw before baking.
- Don’t Overmix the Batter – This keeps the bread soft and fluffy.
- Bake Until Fully Set – The cream cheese layer should be firm when done.
- For Extra Crunch – Add a crumble topping with butter, flour, and sugar.
