  • 1 box instant vanilla pudding mix
  • ¼ tsp table salt
  • ½ cup unsalted butter (room temperature)
  • ¾ cup granulated sugar
  • 2 large eggs (room temperature)
  • 1 tsp vanilla extract
  • 1 cup buttermilk
  • 2 boxes instant vanilla pudding mix (for filling)
  • 4 cups whole milk
  • ½ tsp vanilla extract (for filling)
  • 1½ cups semi-sweet chocolate chips
  • 1 cup heavy cream

Instructions

  1. Preheat oven to 350°F (175°C) and line muffin tin with paper liners.
  2. In a bowl, combine flour, baking powder, pudding mix, and salt.
  3. In another bowl, beat butter and sugar until fluffy. Add eggs one at a time, mixing well. Blend in vanilla extract.
  4. Gradually alternate adding dry ingredients and buttermilk to the butter mixture until just combined.
  5. Fill cupcake liners two-thirds full with batter and bake for 18-20 minutes until toothpick comes out clean.
  6. Cool cupcakes on wire rack; hollow out centers using a piping tip or knife.
  7. Mix remaining pudding mix with milk and vanilla until thickened; refrigerate for 10 minutes before piping into cupcakes.
  8. Freeze filled cupcakes for 30 minutes while preparing ganache.
  9. For ganache, heat chocolate chips and heavy cream until melted; stir until smooth.
  10. Pour ganache over chilled cupcakes and refrigerate until set.
