Ingredients
For the Sandwich:
4 slices of bread (sourdough, whole wheat, or your favorite)
2 tbsp butter, softened
4 large eggs
2 tbsp milk (for fluffy eggs)
½ tsp salt
¼ tsp black pepper
½ cup shredded cheddar cheese
½ cup shredded mozzarella cheese
1 tbsp chopped chives or green onions (optional)
1 tbsp oil or butter (for cooking eggs)
Optional Add-ins:
2 slices cooked turkey bacon or chicken sausage, chopped
¼ cup sautéed spinach or mushrooms
1 small tomato, thinly sliced
Instructions
Step 1: Scramble the Eggs
In a bowl, whisk together eggs, milk, salt, and pepper until well combined.
Heat 1 tbsp oil or butter in a non-stick skillet over medium heat.
Pour in the egg mixture and cook, stirring gently, until just set and fluffy.
Remove from heat and set aside.
Step 2: Prep the Bread & Cheese
Spread softened butter on one side of each slice of bread.
Place 2 slices, butter-side down, on a clean surface.
Sprinkle half of the cheese mixture evenly over the bread.
Top with scrambled eggs and optional add-ins like chives or tomatoes.
Sprinkle the remaining cheese over the eggs.
Top with the remaining slices of bread, butter-side up.
Step 3: Grill the Sandwiches
Heat a clean skillet over medium heat.
Place the sandwiches in the skillet and cook for 2-3 minutes on each side, pressing gently with a spatula.
Flip carefully and cook until both sides are golden brown and the cheese is melted.
Step 4: Serve & Enjoy
Remove from skillet and let rest for 1 minute.
