  • 4 large flour tortillas
  • 1 pound ground turkey sausage
  • 2 cups shredded Colby Jack cheese
  • 6 eggs
  • 1/2 cup milk
  • Salt and pepper to taste
  • Sliced green onions (for garnish)
  • Salsa (for serving)
  • Sour cream (for serving)

Instructions

  1. In a skillet over medium heat, cook the ground turkey sausage until browned and fully cooked. Drain excess grease and set aside.
  2. In a mixing bowl, whisk together the eggs, milk, salt, and pepper until well combined.
  3. Pour the egg mixture into the same skillet and scramble over medium heat until just set.
  4. Heat a clean skillet over medium heat. Lay out tortillas on a flat surface.
  5. On one half of each tortilla, add scrambled eggs, cooked turkey sausage, and shredded cheese.
  6. Fold the other half of the tortilla over the filling to create a half-moon shape.
  7. Place one folded quesadilla at a time in the heated skillet. Cook for about 2-3 minutes on each side until golden brown and crispy.
  8. Transfer to a cutting board, let cool slightly, then slice into wedges before serving with salsa and sour cream.
