Ingredients
- 1 lb chicken breasts
- 1/2 tsp each of salt, pepper, smoked paprika, and garlic powder
- 1 TBSP ranch seasoning
- 1/2 cup mild buffalo sauce
- 2–3 large russet potatoes
- 1 chopped onion
- 1 large handful of broccoli, roughly chopped
- 1–2 TBSP olive oil
- Shredded mozzarella cheese
- Chopped green onions
Instructions
- Cut chicken into cubes and place in a mixing bowl. Season with salt, pepper, garlic powder, smoked paprika, and ranch seasoning. Add buffalo sauce and mix until coated.
- Scrub russet potatoes and chop into small cubes. Chop onion and broccoli into smaller pieces.
- In another bowl, combine potatoes, onions, and broccoli. Drizzle with olive oil and season.
- Lay out aluminum foil pieces; spray lightly with cooking spray. Add potato mixture followed by buffalo chicken on top.
- Seal foil tightly to create packets. Cook on a grill over medium heat for about 20 minutes until chicken is cooked through (165 degrees) and potatoes are tender.
- Open packets carefully; sprinkle mozzarella cheese on top and return to the grill for a few more minutes until melted.
