For the Pasta:

  • 1 (20 oz) package cheese tortellini (fresh or frozen)
  • 2 cups cooked chicken, shredded (rotisserie chicken works great!)
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • ½ cup buffalo sauce (adjust to taste)
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon onion powder
  • 1 teaspoon ranch seasoning (optional)

For the Cheese Blend:

  • 1 cup shredded cheddar cheese
  • ½ cup shredded mozzarella cheese
  • ½ cup crumbled blue cheese (optional)

For Garnish:

  • Chopped green onions
  • Fresh parsley
  • Extra buffalo sauce
  • Ranch or blue cheese dressing (for drizzling)

Instructions

Step 1: Cook the Tortellini

  1. Bring a pot of salted water to a boil and cook cheese tortellini according to package instructions. Drain and set aside.

Step 2: Make the Buffalo Cheese Sauce

  1. In a large skillet over medium heat, melt butter and sauté garlic for 30 seconds until fragrant.
  2. Pour in heavy cream, buffalo sauce, salt, black pepper, onion powder, and ranch seasoning. Stir to combine.
  3. Simmer for 2-3 minutes, allowing the sauce to slightly thicken.

Step 3: Add Cheese & Chicken

  1. Lower the heat and stir in cheddar, mozzarella, and blue cheese until melted and smooth.
  2. Add shredded chicken and cooked tortellini, tossing to coat in the sauce.

Step 4: Serve & Enjoy!

  1. Garnish with green onions, parsley, and extra buffalo sauce.
  2. Serve hot with ranch or blue cheese dressing on the side.

Notes

  • Use Rotisserie Chicken – Saves time and adds extra flavor.
  • Adjust the Spice Level – Add more or less buffalo sauce to taste.
  • Make It Extra Creamy – Add ½ cup cream cheese for a richer texture.
