  • 1 lb beef sirloin or flank steak (cut into bite-sized strips)
  • 1 tbsp olive oil
  • 1 small onion (thinly sliced)
  • 1 bell pepper (sliced)
  • 2 cloves garlic (minced)
  • 1 tbsp Cajun seasoning
  • 1 tsp smoked paprika
  • 1 cup stone-ground grits
  • 4 cups water or chicken broth
  • 1 tbsp butter
  • 1 cup shredded sharp cheddar cheese (optional)

Instructions

  1. In a medium saucepan, bring water (or chicken broth) to a boil. Stir in salt and gradually whisk in the grits. Reduce heat to low and cook for about 20–25 minutes until thick and creamy. Stir in butter and cheese if desired.
  2. Heat olive oil in a large skillet over medium-high heat. Add beef strips seasoned with salt, pepper, Cajun seasoning, and smoked paprika. Sauté for about 4–5 minutes until browned.
  3. In the same skillet, add onion, bell pepper, and minced garlic. Sauté for about 3–4 minutes until softened. Return beef to skillet with broth; let simmer for 2–3 minutes until slightly thickened.
  4. Serve creamy grits topped with the Cajun beef mixture.
