  • ½ Yellow Onion (sliced)
  • 2 Bell Peppers (sliced)
  • 1 Celery Stalk (diced)
  • 4 tablespoons Butter
  • 2 teaspoons Olive Oil
  • 2 teaspoons Onion Powder
  • 2 teaspoons Garlic Powder
  • 1 teaspoon Paprika
  • 2 teaspoons Cajun Seasoning
  • ¼ cup All-Purpose Flour
  • 2 cups Chicken Broth
  • 1 teaspoon Chicken Bouillon Powder

Instructions

  1. Massage olive oil into chicken breasts and season both sides with onion powder, garlic powder, Cajun seasoning, and paprika.
  2. Heat a skillet over medium-high heat, add olive oil, and sear the seasoned chicken for about 3-4 minutes per side until cooked through (internal temperature of 165°F).
  3. Remove chicken from skillet and reduce heat to low. Add butter along with sliced peppers, onions, and diced celery; sauté until soft.
  4. Stir in flour to form a roux, cooking for about 2-3 minutes.
  5. Gradually whisk in chicken broth until smooth; add bouillon powder and adjust seasoning.
  6. Shred cooked chicken and return to the skillet; simmer until desired thickness is reached.
  7. Serve hot over rice or preferred sides.
