  • 1 pound large shrimp (peeled and deveined)
  • Creole seasoning
  • 2 tablespoons canola oil
  • 1 large onion (diced)
  • 1 tablespoon minced garlic
  • 1 large bay leaf
  • 2 teaspoons fresh thyme
  • ½ cup chopped celery sticks
  • 1 red bell pepper (diced)
  • 1 teaspoon smoked paprika
  • 45 cups warm chicken stock
  • 5 ears of corn (about 3 cups)
  • 1 teaspoon white pepper
  • 1 potato (about half pound)
  • Fresh parsley for garnish

Instructions

  1. Prepare the corn by cutting the kernels from the cob and gathering them with their juices in a bowl.
  2. Season the shrimp generously with Creole seasoning. Heat canola oil in a heavy-bottomed Dutch oven over medium heat.
  3. Sauté the shrimp for about 3-5 minutes until just cooked through; set aside.
  4. In the same pot, sauté onions, garlic, bay leaf, and thyme for one minute. Add celery, bell pepper, smoked paprika, and more Creole seasoning; cook until onions are soft.
  5. Stir in tomato paste and cook briefly before adding warm chicken stock, corn kernels, white pepper, and diced potatoes.
  6. Bring to a boil and simmer for 20-30 minutes until potatoes are tender. Add sautéed shrimp during the last few minutes if desired. Garnish with parsley before serving.
