Ingredients

  • 4 salmon fillets (~6 oz. each)
  • 1 Tbsp olive oil
  • 2 jalapenos (ribs and seeds removed, diced)
  • ½ Tbsp olive oil
  • 1½ cups corn grits
  • 1 tsp salt
  • 3 cups low-sodium chicken stock (can substitute vegetable broth)
  • 2 cups hot water
  • 1 cup heavy cream
  • 1½ cups shredded cheddar cheese (I used Cabot's Seriously Sharp Cheddar Cheese)
  • 1 Tbsp paprika
  • ½ Tbsp garlic powder
  • ½ Tbsp dried oregano
  • 1 tsp black pepper
  • 1 tsp onion powder
  • ½ tsp kosher salt
  • ¼ tsp cayenne pepper (or to taste)
  • Chopped green onions (optional)

Instructions

  1. Heat olive oil in a medium saucepan over medium heat. Sauté diced jalapenos for 3–5 minutes until soft.
  2. Add corn grits, salt, chicken stock (or vegetable broth), and hot water. Stir well and bring to a boil.
  3. Reduce heat to low, cover, and let it simmer for about 20 minutes while stirring occasionally.
  4. After 20 minutes, mix in heavy cream, cheddar cheese, paprika, garlic powder, black pepper, and cayenne pepper until fully combined.
  5. Preheat your grill or grill pan over medium-high heat. Brush salmon fillets with olive oil and season with salt and pepper.
  6. Grill salmon skin-side down for about 4–5 minutes per side until cooked through.
  7. Serve cheesy jalapeno grits on plates topped with grilled salmon, garnished with chopped green onions if desired.
