  • ½ pound fettuccine
  • 1 pound boneless chicken thighs or breast
  • ½ pound medium shrimp, peeled and deveined
  • ½ pound turkey sausage, sliced
  • 2 tablespoons olive oil
  • 1 medium onion, sliced
  • 2 teaspoons minced garlic
  • 23 medium tomatoes, diced
  • 1 tablespoon cornstarch
  • ½ teaspoon thyme
  • 1 teaspoon smoked paprika
  • 1 tablespoon Creole seasoning
  • 1 teaspoon Worcestershire sauce
  • 1 medium bell pepper, sliced (red or green)
  • 2 cups chicken broth
  • Fresh parsley for garnish

Instructions

  1. Cook the fettuccine according to package directions until al dente. Drain and set aside.
  2. Season chicken and shrimp with Creole spice. In a heavy-bottomed pan, heat oil over medium heat and sauté shrimp for about 3–5 minutes until pink. Remove from the pan.
  3. In the same pan, add chicken thighs and turkey sausage; sauté until browned on both sides. Remove from the pan.
  4. Add onions, tomatoes, garlic, and cornstarch to the pan and stir for about a minute. Incorporate thyme, paprika, Creole seasoning, bell peppers, chicken broth, cooked sausage, and chicken.
  5. Bring to a boil then reduce heat to simmer for about 7–10 minutes until flavors meld.
  6. Combine with cooked fettuccine before serving; adjust seasonings as necessary.
  7. Serve garnished with fresh parsley.
