- 16 ounces diced green chiles
- 1 can (14 ounces) diced tomatoes
- 4 cups chicken broth
- 1 tablespoon ground cumin
- 1 tablespoon dried oregano
- ½ cup chopped cilantro
- 1 bay leaf
- 1 large Russet potato, peeled and diced
Instructions
- Heat vegetable oil in a large pot over medium heat. Season chuck roast pieces with salt and pepper; brown them on all sides. Transfer to a mixing bowl.
- In the same pot, sauté diced onions until translucent (about 5 minutes). Add minced garlic and cook for another 30 seconds.
- Add green chiles, diced tomatoes, and broth to the pot along with cumin, oregano, cilantro, and bay leaf. Return the browned beef along with any juices.
- Increase heat to high until boiling; then reduce to low and simmer for about 1 hour. Add diced potatoes and continue cooking for an additional 2 hours or until beef is fork-tender.
