  • 2 tablespoons vegetable oil
  • Kosher salt and black pepper
  • 3 pounds chuck roast, cut into ½-inch pieces
  • 1 cup diced onion
  • 8 cloves garlic, minced
  • 16 ounces diced green chiles
  • 1 can (14 ounces) diced tomatoes
  • 4 cups chicken broth
  • 1 tablespoon ground cumin
  • 1 tablespoon dried oregano
  • ½ cup chopped cilantro
  • 1 bay leaf
  • 1 large Russet potato, peeled and diced

Instructions

  1. Heat vegetable oil in a large pot over medium heat. Season chuck roast pieces with salt and pepper; brown them on all sides. Transfer to a mixing bowl.
  2. In the same pot, sauté diced onions until translucent (about 5 minutes). Add minced garlic and cook for another 30 seconds.
  3. Add green chiles, diced tomatoes, and broth to the pot along with cumin, oregano, cilantro, and bay leaf. Return the browned beef along with any juices.
  4. Increase heat to high until boiling; then reduce to low and simmer for about 1 hour. Add diced potatoes and continue cooking for an additional 2 hours or until beef is fork-tender.
  5. Serve warm in bowls with optional toppings like avocado slices or shredded cheese.
