- 1 cup superfine sugar

- 1 tbsp vanilla extract
- 1 cup mini chocolate chips

- Preheat your oven to 350°F (175°C). Grease two 9-inch round cake pans and line with parchment paper.
- In a mixing bowl, cream together softened butter and sugar until fluffy. Add eggs one at a time, mixing well after each addition, then stir in vanilla extract.
- In another bowl, whisk together flour, baking powder, and salt. Gradually combine with the wet ingredients, alternating with milk until just mixed.
- Divide batter between prepared pans and bake for about 20 minutes or until a toothpick comes out clean.
- For the filling, mix ricotta, mascarpone, superfine sugar, lemon zest, and vanilla until smooth; gently fold in mini chocolate chips.
