Ingredients
For the Caramelized Onions:

2 tbsp olive oil or unsalted butter

3 large yellow onions, thinly sliced

1 tsp sugar (optional, to speed up caramelization)

½ tsp salt

1 tbsp balsamic vinegar (optional for depth)
For the Pasta:

8 oz spaghetti or linguine

Salt (for boiling water)

½ cup reserved pasta water
For the Chilli Oil:

¼ cup olive oil

1½ tsp red pepper flakes (adjust to taste)

1 garlic clove, minced

½ tsp smoked paprika (optional)
For Garnish:

Fresh parsley or basil, chopped

Grated parmesan or nutritional yeast (optional)

Instructions
Step 1: Caramelize the Onions

Heat 2 tbsp olive oil or butter in a large skillet over medium-low heat.

Add sliced onions and sprinkle with salt and sugar.

Cook slowly for 25–30 minutes, stirring every few minutes, until deep golden brown.

Stir in balsamic vinegar and cook 2–3 minutes more. Set aside.
Step 2: Cook the Pasta
5. Bring a pot of salted water to a boil and cook pasta until al dente.
6. Reserve ½ cup pasta water, then drain the pasta.
Step 3: Make the Chilli Oil
7. In a small saucepan, heat ¼ cup olive oil over low heat.
8. Add minced garlic, red pepper flakes, and smoked paprika.
9. Cook gently for 1–2 minutes until fragrant (don’t burn the garlic).
10. Remove from heat and set aside.
Step 4: Toss the Pasta with Onions
11. Add drained pasta to the pan with caramelized onions.
12. Add reserved pasta water a little at a time to loosen and coat.
13. Toss gently until pasta is coated with the onions.
Step 5: Finish with Chilli Oil & Serve
14. Drizzle chilli oil over the pasta and toss again to combine.
15. Garnish with chopped herbs, black pepper, and parmesan if desired.
16. Serve warm with extra chilli oil on the side.
