For the Bread:

  • 2 ripe bananas, mashed
  • 1 cup shredded carrots
  • ½ cup vegetable oil (or melted butter)
  • ½ cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ½ cup chopped walnuts or pecans (optional)
  • ½ cup raisins (optional)

For the Topping (Optional):

  • 2 tablespoons chopped nuts
  • 1 tablespoon brown sugar

Instructions

Step 1: Preheat & Prepare the Pan

  1. Preheat oven to 350°F (175°C).
  2. Grease a 9×5-inch loaf pan with butter or non-stick spray.

Step 2: Mix the Wet Ingredients

  1. In a large bowl, mash bananas until smooth.
  2. Add shredded carrots, vegetable oil, brown sugar, eggs, and vanilla extract. Mix until well combined.

Step 3: Mix the Dry Ingredients

  1. In another bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  2. Gradually fold the dry ingredients into the wet ingredients, stirring gently until just combined.
  3. Fold in walnuts and raisins (if using).

Step 4: Bake the Bread

  1. Pour the batter into the prepared loaf pan.
  2. Sprinkle the top with chopped nuts and brown sugar (if using).
  3. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.

Step 5: Cool & Serve

  1. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  2. Slice and enjoy warm or at room temperature!

Notes

  • Use Overripe Bananas – The riper, the sweeter and more flavorful your bread will be.
  • Grate Carrots Finely – This helps them blend smoothly into the batter.
  • Don’t Overmix – Stir just until combined to keep the bread light and fluffy.
  • Add a Cream Cheese Frosting – For a dessert-like version, spread cream cheese frosting on top!
