1 cup all-purpose flour
-
1 tbsp baking powder
-
½ tsp baking soda
-
½ tsp salt
-
1 cup buttermilk
-
2 large eggs
-
¼ cup unsalted butter, melted (plus 1 tbsp for the pan)
-
2 tbsp honey or sugar (optional for a hint of sweetness)
Optional Add-Ins:
-
½ cup shredded cheddar cheese
-
¼ cup chopped jalapeños or green chilies
-
½ cup corn kernels (fresh or thawed frozen)
Instructions
Step 1: Preheat the Oven and Skillet
-
Preheat your oven to 425°F (220°C).
-
Place the cast iron skillet in the oven while it heats. This helps form that iconic crispy crust.
Step 2: Mix the Dry Ingredients
3. In a large bowl, whisk together the cornmeal, flour, baking powder, baking soda, and salt.
Step 3: Add the Wet Ingredients
4. In a separate bowl or measuring cup, whisk together buttermilk, eggs, melted butter, and honey (if using).
5. Pour the wet ingredients into the dry mixture and stir just until combined.
6. Fold in any optional add-ins at this stage.
Step 4: Bake the Cornbread
7. Carefully remove the hot skillet from the oven using oven mitts.
8. Add 1 tbsp butter and swirl to coat the pan (it should sizzle).
9. Pour the batter into the hot skillet and spread evenly.
10. Return to the oven and bake for 20–25 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
Step 5: Cool and Serve
11. Let cool for 10 minutes before slicing.
12. Serve warm with butter, honey, or alongside your favorite savory dishes.
Notes
Use Buttermilk – Adds tang and helps with rise.
Don’t Overmix – Stir until just combined for a tender crumb.
Preheat the Skillet – Crucial for that crispy, golden crust.
Use Medium Grind Cornmeal – For a classic, slightly gritty texture.
Customize – Add herbs, cheese, or spices to suit your taste.
