  • 6 tablespoons melted butter (divided)
  • 1 cup flour
  • 1 cup cornmeal
  • 2 teaspoons baking powder
  • 1 teaspoon salt

  • 1 cup buttermilk
  • 2 eggs

Instructions

  1. Preheat your oven to 425°F (220°C) and place a 10-inch cast iron skillet inside.

  3. In another bowl, combine buttermilk and eggs, then mix well.
  4. Pour the wet mixture into the dry ingredients and stir until just combined.
  5. Add 5 tablespoons of melted butter into the batter and mix thoroughly.
  6. Carefully remove the hot skillet from the oven; add the last tablespoon of melted butter to coat the pan.
  7. Pour the batter into the skillet and level out gently.
  8. Bake for about 20 minutes or until a toothpick inserted into the center comes out clean.
  9. Let cool slightly before cutting into slices; serve warm.
