Ingredients
- 1 ½ pounds ground beef (80/20)
- 3 red bell peppers, chopped
- 1 sweet onion, chopped
- 2 poblano peppers, chopped and deseeded
- Few tablespoons of avocado oil
- 10 ounces heavy cream
- 8 ounces white queso, cut into chunks
- 1 can of Rotel (8 ounces)
- American cheese slices
- Slider buns
- Garlic aioli
- Salt and pepper to taste
- Favorite beef rub
Instructions
- Form the ground beef into a large patty slightly larger than the slider buns; season with beef rub and refrigerate for 30 minutes.
- In a large skillet over medium-high heat, add avocado oil and sauté the chopped bell peppers and onions for about 10–12 minutes until softened.
- In a saucepan, warm heavy cream over medium heat; whisk in white queso until melted. Stir in Rotel and season to taste; keep warm.
- Cook the burger patty in a preheated griddle for about 4–5 minutes on one side; flip and cook for another 2 minutes, then top with sautéed vegetables and cheese until melted.
- Toast slider buns on the griddle, spread garlic aioli on each bottom bun, assemble sliders with meat and toppings, serve immediately with warm queso.
