  • 1 ½ pounds ground beef (80/20)
  • 3 red bell peppers, chopped
  • 1 sweet onion, chopped
  • 2 poblano peppers, chopped and deseeded
  • Few tablespoons of avocado oil
  • 10 ounces heavy cream
  • 8 ounces white queso, cut into chunks
  • 1 can of Rotel (8 ounces)
  • American cheese slices
  • Slider buns
  • Garlic aioli
  • Salt and pepper to taste
  • Favorite beef rub

Instructions

  1. Form the ground beef into a large patty slightly larger than the slider buns; season with beef rub and refrigerate for 30 minutes.
  2. In a large skillet over medium-high heat, add avocado oil and sauté the chopped bell peppers and onions for about 10–12 minutes until softened.
  3. In a saucepan, warm heavy cream over medium heat; whisk in white queso until melted. Stir in Rotel and season to taste; keep warm.
  4. Cook the burger patty in a preheated griddle for about 4–5 minutes on one side; flip and cook for another 2 minutes, then top with sautéed vegetables and cheese until melted.
  5. Toast slider buns on the griddle, spread garlic aioli on each bottom bun, assemble sliders with meat and toppings, serve immediately with warm queso.
