Ingredients
For the Apples:

6 medium apples (Honeycrisp or Fuji work best)

1 tbsp lemon juice

1 tsp cinnamon
-
1 tbsp brown sugar
For the Cheesecake Filling:

8 oz cream cheese, softened

¼ cup sour cream
-
¼ cup granulated sugar

1 tsp vanilla extract
-
1 egg
-
Pinch of salt
For the Topping:

½ cup graham cracker crumbs

1 tbsp melted butter
-
1 tbsp brown sugar

Optional: caramel sauce or chopped nuts for garnish
Instructions
Step 1: Prep the Apples

Preheat oven to 350°F (175°C).

Wash the apples and slice off the top ½ inch to create a lid.

Use a spoon or melon baller to scoop out the core and a bit of the flesh, creating a well for the filling. Leave about ½ inch around the sides and bottom to hold the filling.

Brush the inside of the apples with lemon juice to prevent browning.

Sprinkle the inside with a mix of cinnamon and brown sugar. Set aside.
Step 2: Make the Cheesecake Filling

In a mixing bowl, beat the cream cheese until smooth.

Add sour cream, sugar, vanilla, egg, and a pinch of salt.

Mix until creamy and fully combined—about 1–2 minutes with a hand mixer.
Step 3: Fill the Apples

Spoon or pipe the cheesecake mixture into each hollowed-out apple, filling nearly to the top.

Place the filled apples in a baking dish so they sit upright and snugly together.
Step 4: Make the Crumb Topping

In a small bowl, combine graham cracker crumbs, melted butter, and brown sugar.

Sprinkle the mixture over the top of each stuffed apple.
Step 5: Bake

Cover the dish with foil and bake for 20 minutes.

Remove foil and bake for another 20–25 minutes, or until the apples are tender but not mushy and the cheesecake is set.

Step 6: Garnish & Serve
