- 1 cup shredded cheddar cheese
- ¼ cup grated Parmesan cheese
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon mustard powder (optional, for extra flavor)

Instructions
Step 1: Bake the Potatoes
- Preheat oven to 400°F (200°C).
- Scrub the potatoes clean and dry them. Poke a few holes with a fork.
- Rub each potato with olive oil, salt, and black pepper.
- Place directly on the oven rack or a baking sheet and bake for 50-60 minutes, until fork-tender.
Step 2: Make the Broccoli Cheese Sauce
- In a saucepan over medium heat, melt butter and sauté garlic for 30 seconds.
- Add chopped broccoli and cook for 3-4 minutes, until slightly softened.
- Sprinkle flour over the broccoli and stir to coat.
- Gradually add milk and heavy cream, whisking continuously. Simmer for 2-3 minutes until thickened.
- Stir in cheddar, Parmesan, salt, black pepper, and mustard powder, mixing until smooth.
Step 3: Assemble & Serve
- Slice the baked potatoes open and fluff the insides with a fork.
- Spoon the broccoli cheese sauce generously over each potato.
- Add extra toppings like bacon, sour cream, or green onions.
