  • 1 onion (chopped)
  • 1 can refried beans
  • 30 white corn tortillas
  • 2 (10 oz) cans enchilada sauce
  • Shredded Chihuahua cheese

Instructions

  1. In a skillet over medium-high heat, brown the ground beef with chopped onion, seasoning with salt, pepper, chili powder, cumin, and dried cilantro. Drain excess grease and stir in minced garlic and refried beans.
  2. Heat oil in a separate skillet. Fry each tortilla briefly on both sides until bubbling, then drain on paper towels.
  3. Dip each tortilla in enchilada sauce, fill with the beef mixture, roll up tightly, and place in a greased baking dish.
  4. Pour remaining sauce over the top and sprinkle with Chihuahua cheese. Bake at 400°F for about 10 minutes until cheese is melted.
