  • 2 cups instant rice
  • 2 cups chicken broth
  • 1 can (10 ounces) diced tomatoes with green chilies
  • 1 can (10 ounces) red enchilada sauce
  • 1 packet taco seasoning
  • 1 cup yellow onion, diced
  • 1 cup bell pepper, diced
  • 1 cup shredded Colby Jack cheese

Instructions

  1. In a large skillet over medium heat, brown the ground beef with diced onion and bell peppers until the meat is cooked through. Drain any excess grease.
  2. Stir in the taco seasoning until well mixed. Then add the diced tomatoes (with juices), instant rice, and chicken broth. Bring to a simmer and reduce heat to low. Cook until the rice is tender and liquid has absorbed.
  3. Mix in the enchilada sauce and sprinkle shredded cheese on top.
  4. Transfer to an oven preheated to 350°F and bake for 10–15 minutes until the cheese is melted and bubbly. Serve hot.
