Ingredients
- 1 lb boneless, skinless chicken breasts or thighs
- 3 tbsp salted butter, divided
- 4–5 garlic cloves, minced
- 1 cup long grain white rice (Basmati recommended)
- 2 cups roughly chopped fresh broccoli
- 2 cups chicken broth
- 2 cups cheddar cheese, grated
- Salt and pepper to taste
- Garlic powder, onion powder, and paprika (1-2 tbsp each)
Instructions
- Cut the chicken into bite-sized pieces and season with garlic powder, onion powder, and paprika.
- In a skillet over medium heat, melt 2 tablespoons of butter. Cook the seasoned chicken until browned (about 5 minutes). Add minced garlic and cook for an additional minute.
- On the empty side of the skillet, melt the remaining tablespoon of butter and toast the rice for a couple of minutes until golden.
- Add chopped broccoli and chicken broth; bring to a gentle boil.
- Cover and reduce heat to simmer for about 12–15 minutes until the rice is fully cooked.
- Season with salt and pepper; sprinkle cheddar cheese on top and cover until melted.
