Ingredients

  • Shredded Chicken (3 cups) – Use rotisserie chicken for convenience.
  • Corn Tortillas (10 small) – A classic base for enchiladas.
  • Enchilada Sauce (2 cups) – Use store-bought or homemade.
  • Shredded Cheese (2 cups) – A mix of cheddar and Monterey Jack works great.
  • Sour Cream (½ cup) – Adds a creamy texture.
  • Black Beans (1 cup, drained & rinsed) – Adds extra protein and texture.
  • Diced Green Chilies (1 can, 4 oz) – Mild heat and flavor.
  • Cumin (1 tsp) – Warm, earthy spice.
  • Garlic Powder (1 tsp) – Adds depth of flavor.
  • Onion Powder (1 tsp) – Enhances the savory taste.
  • Salt & Pepper – To taste.
  • Chopped Fresh Cilantro (¼ cup, optional) – For garnish.

Instructions

Step 1: Preheat and Prep

Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.

Step 2: Mix the Filling

In a bowl, combine shredded chicken, black beans, diced green chilies, cumin, garlic powder, onion powder, salt, and pepper. Mix well.

Step 3: Layer the Casserole

  1. Spread a thin layer of enchilada sauce on the bottom of the baking dish.
  2. Add a layer of corn tortillas, overlapping slightly.
  3. Spread half of the chicken mixture over the tortillas.
  4. Drizzle with more enchilada sauce and sprinkle with some cheese.
  5. Repeat the layers—tortillas, chicken mixture, sauce, and cheese—until all ingredients are used, ending with a generous layer of cheese on top.

Step 4: Bake the Casserole

Cover with foil and bake for 20 minutes. Remove the foil and bake for another 10 minutes, until the cheese is melted and bubbly.

Step 5: Serve and Enjoy!

 

Let the casserole rest for 5 minutes before slicing. Garnish with fresh cilantro and serve with sour cream or avocado.
