Instructions
Step 1: Preheat and Prep
Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
Step 2: Mix the Filling
In a bowl, combine shredded chicken, black beans, diced green chilies, cumin, garlic powder, onion powder, salt, and pepper. Mix well.
Step 3: Layer the Casserole
- Spread a thin layer of enchilada sauce on the bottom of the baking dish.
- Add a layer of corn tortillas, overlapping slightly.
- Spread half of the chicken mixture over the tortillas.
- Drizzle with more enchilada sauce and sprinkle with some cheese.
- Repeat the layers—tortillas, chicken mixture, sauce, and cheese—until all ingredients are used, ending with a generous layer of cheese on top.
Step 4: Bake the Casserole
Cover with foil and bake for 20 minutes. Remove the foil and bake for another 10 minutes, until the cheese is melted and bubbly.
