Ingredients
For the Filling:
- 1 ½ cups cooked corned beef, shredded (or use a lean alternative like beef)
- 1 cup mashed potatoes (leftover mashed potatoes work great!)
- ½ cup shredded cheddar cheese
- 1 tablespoon Dijon mustard (optional for a little tang)
- 1 tablespoon mayonnaise
- 1 small onion, finely chopped
- Salt and pepper to taste
For the Coating:
- 1 cup all-purpose flour
- 2 large eggs, beaten
- 2 cups breadcrumbs (panko or regular)
- Vegetable oil (for frying)
Instructions
Step 1: Prepare the Filling
- In a mixing bowl, combine the shredded corned beef, mashed potatoes, cheddar cheese, Dijon mustard, mayonnaise, and chopped onion.
- Mix until everything is well combined. Taste and season with salt and pepper to your liking.
Step 2: Shape the Croquettes
- Scoop a tablespoon of the mixture and shape it into a small log or oval. Repeat until all the filling is used up, placing the shaped croquettes on a plate.
Step 3: Coat the Croquettes
- Set up a breading station: In one bowl, place the flour. In a second bowl, beat the eggs. In the third bowl, place the breadcrumbs.
- Dredge each croquette first in the flour, then dip in the eggs, and finally coat in the breadcrumbs. Repeat until all croquettes are coated.
Step 4: Fry the Croquettes
- Heat the vegetable oil in a frying pan over medium-high heat, about 2-3 inches deep, or use a deep fryer.
- Fry the croquettes in batches for 2-3 minutes per side, or until golden brown and crispy.
- Remove the croquettes from the oil and drain them on paper towels.
